Fall Cooking: Black Lentils and Roasted Butternut Squash

Nothing says Halloween greater than the colours orange and black. These two colours robotically recall to mind the spooky, surreal photographs of this playful vacation. Though it’s enjoyable to embellish the home and costume the youngsters, why not carry the theme throughout to the dinner desk?

Black Lentils and Roasted Butternut Squash

1 butternut squash, peeled, seeded and lower into 1” cubes

1 candy potato, peeled and lower into 1/2″ cubes

1 Tablespoon olive oil

2 Tablespoons salted butter

Chopped recent herbs, equivalent to basil or thyme, elective

Salt and cracked pepper, to style

1 cup black lentils, rinsed and picked over

2 teaspoons mushroom powder


First, put together the butternut squash.

Preheat oven to 375.

Add chopped squash, candy potatoes, olive oil, 1 Tablespoon butter, salt, pepper and herbs to a big casserole dish. Combine to include.

Cowl and bake for half-hour. Then combine, rigorously dislodging any caught greens from the underside of the pan.

Proceed cooking, uncovered, for about half-hour, or till the squash and potatoes are tender.

In the meantime, put together the black lentils.

To serve, place the black lentils on a platter. High with the cubed butternut squash and candy potatoes, leaving a border of lentils seen on the plate. Garnish with herbs, for those who want. Serve heat or at room temperature.


Desire a sweeter taste?

Rather than the cracked pepper and recent herbs, add 2 teaspoons cinnamon and 1 Tablespoon every brown sugar and honey to the squash. Proceed to observe the recipe as listed. To make this dish festive for the upcoming vacation season, add 1 cup recent cranberries (or 1/2 dried) earlier than baking.
